1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 tablespoon white sesame seeds
2-inch piece of cinnamon stick
2-3 dried red chilies
2-3 cloves
30-40 black peppercorns
1.5 cups gram flour
a handful of fenugreek leaves
green chili and ginger paste
a little baking soda
crushed coriander seeds
a little red chili powder
a little sugar
1 tablespoon lemon juice
1 tablespoon cooking oil
salt
water
milk

Take 1 tablespoon cumin seeds, 1 tablespoon fennel seeds, 1 tablespoon white sesame seeds, a 2-inch piece of cinnamon stick, 2-3 dried red chilies, 2-3 cloves, and 30-40 black peppercorns.

Roast these spices well and let them cool down.

Grind the cooled spices into a coarse powder.

In a mixing bowl, add 1.5 cups of gram flour, making sure it is finely ground.

Add the roasted spice powder to the gram flour.

Add a handful of chopped fenugreek leaves.

Add green chili and ginger paste.

Add a little baking soda.

Crush some coriander seeds and add them to the mixture.

Add a little red chili powder and a little sugar, which is very important.

Add 1 tablespoon lemon juice and 1 tablespoon of your preferred cooking oil.

Do not add water; instead, add milk gradually to mix the ingredients.

Add salt to taste.

Mix everything well until it reaches a thick consistency.

Wash your hands and take a portion of the mixture.

Shape the mixture into round dumplings (gote).

Heat oil in a pan on medium to high flame.

Fry the dumplings for 5-6 minutes, stirring continuously to ensure they cook evenly without burning.

Serve with fried green chilies and tangy yogurt or sweet and sour yogurt.
