1 tbsp sesame seeds
1 cup split chickpeas (chana dal)
2 green chilies
1 inch ginger
1/2 tsp black pepper (crushed)
1 tsp sugar
1 tsp crushed coriander seeds
1/2 tsp salt
1/2 cup fresh fenugreek leaves
1/4 cup milk
1/2 tsp baking soda
1 tbsp lemon juice

Make a dry spice mix by roasting cumin seeds, dried red chilies, bay leaf, black pepper, cloves, and sesame seeds in a pan.

Grind the roasted spices into a coarse powder.

Crush chana dal in a mixer until it resembles coarse flour.

Combine the crushed chana dal with the ground spice mix.

Add chopped green chilies, grated ginger, crushed black pepper, sugar, crushed coriander seeds, salt, and fresh fenugreek leaves to the mixture.
