1 cup besan (gram flour)
1/2 cup water
8-10 whole black pepper
1 tablespoon whole coriander
1 teaspoon cumin
5-6 green chilies
1 small piece ginger
1/2 teaspoon salt
1/4 teaspoon turmeric powder
2-3 tablespoons red chili powder
2-3 tablespoons yogurt
2-3 tablespoons kasuri methi (dried fenugreek leaves)
3 tablespoons oil
a pinch of baking soda

Prepare a special spice mix by grinding 8-10 whole black pepper, 1 tablespoon whole coriander, and 1 teaspoon cumin in a small mixer without water.

Add 5-6 green chilies and a small piece of ginger to the mixer and grind into a paste without water.

In a large bowl, mix together the besan (gram flour) and the strained water from the chickpeas.

Add the ground spice mix to the bowl.

Add 1/2 teaspoon salt (adjust to taste) and 1/4 teaspoon turmeric powder.

Add 2-3 tablespoons red chili powder based on your spice preference.

Add 2-3 tablespoons yogurt to make the pakoras soft.

Add 2-3 tablespoons kasuri methi (dried fenugreek leaves) or fresh methi if available, or omit if not using.

Add the ginger and green chili paste to the mixture.

Pour in 3 tablespoons of oil to keep the pakoras moist while frying.

Mix the ingredients well and then add water gradually to achieve the desired batter consistency. Let the batter rest for 15-20 minutes.

After resting, add a pinch of baking soda and mix well.

Heat oil in a pan for frying the pakoras. Once hot, reduce the flame to medium.

Scoop the batter and drop it into the hot oil, frying several pakoras at once.

Fry the pakoras for 3-4 minutes, turning them occasionally until they are golden brown.

Serve the hot besan pakoras with yogurt and green chilies.
