1 cup chana dal
1 tablespoon white sesame seeds
1 tablespoon coriander seeds
1 teaspoon black pepper
1 teaspoon cumin seeds
1 teaspoon large cardamom
2-3 cloves
1/2 teaspoon carom seeds
2 tablespoons peanut oil
2 tablespoons warm milk
1/4 teaspoon turmeric powder
salt to taste
Kashmiri red chili powder to taste
2 tablespoons dried fenugreek leaves
1 teaspoon lemon juice
1 tablespoon sugar
1/2 teaspoon garam masala
1/2 cup milk
water as needed

Soak 1 cup chana dal in water and then dry it in the sun.

Dry roast 1 tablespoon white sesame seeds, 1 tablespoon coriander seeds, 1 teaspoon black pepper, 1 teaspoon cumin seeds, 1 teaspoon large cardamom, 2-3 cloves, and 1/2 teaspoon carom seeds until fragrant.

Transfer the roasted spices to a grinder and coarsely grind them.

Grind the soaked chana dal and strain it, then grind the coarse pieces again.

Transfer the ground chana dal to a bowl and add 2 tablespoons peanut oil, mixing well with your hands.

Add 2 tablespoons warm milk to the mixture and mix again until it reaches a dough-like texture.

Cover the mixture and let it rest for 15 minutes.

After 15 minutes, strain the mixture again and grind the coarse pieces once more.

Add 1/4 teaspoon turmeric powder, salt to taste, Kashmiri red chili powder to taste, and 2 tablespoons crushed dried fenugreek leaves to the mixture.

Add 1 teaspoon lemon juice and 1 tablespoon sugar, then mix well.

Gradually add 1/2 cup milk and enough water to achieve a smooth consistency.

Heat oil in a deep frying pan and drop in medium-sized portions of the mixture to deep fry on medium heat.

Once golden brown, remove them and let them rest for 3-4 minutes before deep frying them again for extra crispiness.
