Couscous

Cultural Context

Couscous has its roots in North Africa, particularly in countries like Libya, where it is a staple food. Traditionally, it is served with stews or vegetables, often during communal meals. Today, couscous is enjoyed worldwide, with countless variations that incorporate local ingredients and flavors.

LYLYmain
6 servings
Servings4
2 cups couscous
4 cups chicken stock
2 cups water
1 lb shrimp
2 scotch bonnet peppers
1 teaspoon white pepper
1 teaspoon black pepper
1 medium onion
2 tablespoons cooking oil
2 tablespoons ginger garlic paste
2 cups carrots
1 cup runner beans
1 cup bell pepper
2 teaspoons seasoning powder
1/2 cup spring onions

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

In a bowl, add some boiling liquid (chicken stock and water).

2

Add couscous to the boiling liquid and stir well.

3

Cover the bowl with clean film or foil and set aside for about 7 minutes to absorb the liquid.

4

Prepare the shrimp by deveining and patting them dry with a paper towel to remove excess moisture.

5

Season the shrimp with scotch bonnet peppers, white pepper, and black pepper, then set aside.

6

After 7 minutes, check the couscous; it should have absorbed the liquid. Fluff it with a fork and set aside.

7

In a clean, dry pan, add cooking oil and heat it slightly.

8

Add chopped onions to the pan and cook for a few minutes.

9

Add ginger garlic paste and stir until aromatic.

10

Add the seasoned shrimp to the pan and cook on medium-high heat for about 2 minutes.

11

Add chopped carrots and runner beans to the pan, along with spices (as mentioned in the description). Stir-fry for a few minutes.

12

Add bell pepper to the pan and stir, cooking for about a minute.

13

Add seasoning powder and stir everything together.

14

Add the fluffed couscous to the pan and mix well with the vegetables and spices.

15

Add chopped spring onions and remove from heat.
