1

Toast pine nuts in a skillet over medium-low heat and set aside.

2

In the same skillet, add olive oil and diced onions, sauté until soft and translucent.

3

Add a combination of ground lamb and beef to the skillet and brown the meat.

4

Add spices (garam masala, coriander, cumin, cayenne, mint) to the browned meat and cook for 5 minutes.

5

Stir in the toasted pine nuts and set the filling aside to cool.

6

Soak bulgur wheat in warm water using cheesecloth to rehydrate.

7

Drain and squeeze out excess water from the bulgur wheat until chewy.

8

In a food processor, chop onions and spices for the kibbe shell.

9

Add ground beef to the food processor and chop until a meat paste forms.

10

Combine the meat paste with the rehydrated bulgur wheat and mix until uniform.

11

Add cornstarch to the mixture and blend until well combined.

12

Form the kibbe shell by hand or using a sausage maker attachment to create a cavity for the filling.

13

Fill the kibbe shell with the meat filling and pinch to seal.

14

Fry the kibbe until crispy or bake as desired.
