1

Season the salmon with salt and pepper on both sides.

2

Heat oil in a large pot over medium-high heat; fry the salmon for about 4-5 minutes on each side until golden brown.

3

Wash the basmati rice and soak it for about 20 minutes.

4

In the soaking water, add green cardamoms and a cinnamon stick.

5

Boil the rice until it's 95% cooked, then drain it.

6

Fry the potatoes in the same oil with a little yellow food color and salt for about 10 minutes, then set aside.

7

Fry the sliced onions in batches until golden brown, then set aside.

8

Remove half of the oil from the pot, leaving half to cook the onion paste.

9

Blend the fried onions into a paste and add to the pot with a tablespoon of ginger garlic paste; cook for 4-5 minutes.

10

Add a little water, salt, pepper, and spices (coriander powder, cumin powder, lychee powder, cinnamon powder, cloves powder) to the pot.

11

Add the fried potatoes and cook for a few more minutes, adding water if needed.

12

Add green chilies and the fried salmon cut into bite-sized pieces; cook for 2-3 minutes with the gravy.

13

Stir in chopped coriander and mint, and a handful of the fried onions; mix well and turn off the heat.

14

Layer the cooked gravy and fish at the bottom of a pot, then add a layer of rice on top.

15

Add a layer of fried onions, frozen green peas, and sliced hard-boiled eggs.

16

Drizzle some oil over the top, then repeat the layering process with the remaining gravy, rice, peas, and onions.

17

Cover the pot and cook over low to very low heat for about 10 minutes.
