1 cup bread crumbs
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons curry powder
1 cup coconut milk
2 tablespoons tomato paste
1 medium bell pepper, diced
1 medium carrot, diced
2 bay leaves
1 teaspoon thyme
2 tablespoons oil

Mix ground beef, bread crumbs, egg, salt, black pepper, and curry powder in a bowl until well combined.

Shape the mixture into meatballs, about the size of a golf ball.
