Add 8 stock cubes, 2 bay leaves, 4 Indonesian bay leaves, 1 lemongrass, a handful of whole pepper kernels/allspice, 1 chopped red onion, 4/5 pieces of fresh ginger, and 4/5 pieces of galangal to the pot.

Season with salt and pepper to taste and simmer to infuse flavors.

Prepare toppings: cook vegan chicken with poultry seasoning, slice flat celery, and prepare potato scrips, bean sprouts, and bean thread vermicelli.
