1

Clean the goat meat and trim excess fat, leaving some for moisture.

2

Marinate the goat meat with 1 tablespoon curry powder, 3 tablespoons all-purpose seasoning, 2.5 tablespoons olive oil, chopped onion, garlic, thyme, and scallion.

3

Wrap the marinated goat meat and refrigerate overnight to enhance flavor.

4

On the next day, peel and cube the potatoes, placing them in water to prevent oxidation.

5

Heat 1.5 tablespoons olive oil in a large pot until it reaches smoke point.

6

Sear half of the marinated goat meat in the hot oil for 1.5 to 2 minutes on each side until browned, then remove and set aside.

7

Add the remaining goat meat to the pot and sear it as well.

8

Pour in 5 cups of water, enough to cover the meat, and bring to a boil.

9

Once boiling, reduce heat to medium and let it cook for about 1 hour, checking for tenderness.

10

After 1 hour, check the meat; if still firm, continue cooking for another hour to hour and a half.

11

Add half a can (70g) of coconut cream, 1 teaspoon of masala, 1 teaspoon ground pimento, and 0.5 teaspoon black pepper to the pot.

12

Mix well and let it simmer on medium heat for another hour, adding potatoes later to avoid them becoming mushy.
