Soak goat meat in vinegar and lemon juice, then wash with lime.

Season goat meat with salt, green seasoning, scotch bonnet peppers, ground clove, thyme, grated ginger, grated onion, and 2 tablespoons of curry powder.

Mix the seasoning into the goat meat and transfer to a container to marinate overnight in the fridge.

Heat a Dutch pot on medium-low heat and add 3 tablespoons of vegetable oil.

Add 1 teaspoon of turmeric and 2 tablespoons of curry powder to the heated oil and let it brown.

Add the marinated goat meat to the pot and brown it, turning occasionally for about 2 minutes.

Add 3 cups of hot water to the pot to deglaze and mix well, letting it boil down.

After 45 minutes, check the pot and add 2 more cups of hot water, mixing occasionally.

After another 30 minutes, add a medium-sized potato, fresh garlic, and bell peppers to the pot.

Add a little salt to taste and another half cup of water if needed.

Once the potato is cooked and the meat is tender, remove from heat.
