4 slices whole grain bread
1/2 cup cucumber, sliced
1/2 cup tomato, sliced
1/4 cup onion, sliced
1/4 cup bell pepper, sliced
1/4 cup lettuce leaves
2 tablespoons mayonnaise
1 teaspoon mustard
to taste salt
to taste pepper

Toast the bread slices lightly if desired.

Spread mayonnaise on one side of each slice of bread.

Spread mustard on the other side of two slices of bread.

Layer the cucumber, tomato, onion, bell pepper, and lettuce on top of the mayonnaise side of the bread.

Sprinkle salt and pepper over the vegetables to taste.

Top with the other two slices of bread, mustard side down.

Cut the sandwich in half diagonally or into quarters.
