Mix the yeast and sugar in about 1/4 cup of warm water and let it proof.
In a large bowl, sift the semolina and salt, then add water gradually while mixing until the dough comes together.
Add the yeast mixture gradually while kneading.
Knead by hand or use a stand mixer with a hook attachment until the dough is soft and a little sticky, about 15-30 minutes.
Put the dough back in the large bowl and add about 2 tablespoons of olive oil; knead the dough in the olive oil for a few minutes.
Lift the dough up and down for about two minutes to create an airy texture.
Divide the dough into 2-3 balls and sprinkle flour on sheets of parchment paper.
Flatten each ball into a thin circle and cover with a kitchen towel to let it rise until doubled in volume.
Use a knife to cut each circle into four pieces.
Fry the pieces in vegetable or canola oil, using a spoon to throw some oil on top to help them rise while frying.
Cook both sides until golden and drain on paper towels.
