Prepare the dough for saj bread by mixing 3 kg of flour, 2 tablespoons of yeast, and 2 tablespoons of salt in a bowl.
Gradually add boiling water until the dough is soft but not too soft.
Knead the dough until it becomes smooth and can easily come off the bowl.
Lubricate the dough to prevent sticking and cover it with a blanket to rest.
After resting, the dough should rise and fill the bowl.
Flour the table to prevent sticking and cut the dough into pieces, covering them again to rest for about 40 minutes.
Prepare the chicken fillet and mushrooms by cleaning them; cut the chicken into long strips and slice the mushrooms.
Peel and slice the onions and potatoes; cut the peppers into long strips.
Heat the saj by pouring earth on top to prevent overheating and add a little vegetable oil.
Season the chicken fillet with salt, paprika, and thyme, then add it to the saj.
After the mushrooms are slightly fried, add the chicken fillet to the saj.
Add the peppers close to the end of cooking.
Bake the saj bread on both sides, ensuring the edges are cooked.
Fry the potatoes in vegetable oil until golden brown.
