Soak barley in water for several hours or overnight.
Drain and rinse the soaked barley.
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add soaked barley and water to the pot; bring to a boil.
Reduce heat and simmer for 30 minutes, stirring occasionally.
Add chopped spinach, kale, and diced potatoes; cook for another 15 minutes.
Incorporate diced carrots and chickpeas; season with salt, black pepper, cumin, and turmeric.
Continue to simmer until all vegetables are tender, about 10 minutes.
Adjust seasoning to taste, adding lemon juice before serving.
Serve hot, garnished with fresh cilantro.
