Traditionally filled with spiced potatoes and peas, they symbolize hospitality and are often served at celebrations and gatherings. Boil, peel, and mash the potatoes.
Sauté chopped onions until golden.

Combine the mashed potatoes, sautéed onions, and chopped fresh herbs (like cilantro/parsley).
Cut the flatbread (like lavash) into strips.
Fill the strips with the potato mixture and fold them into a triangular shape.
Fry the Samosas in hot oil until they are golden-brown and crispy.
Dice and quickly fry the potatoes, onions, and sausage for the pizza Samosa filling.
Sauté the mushrooms separately.
Add all the fried ingredients together and season with salt and pepper.
Cut the flatbread into strips for the pizza Samosas.
Add the filling and mozzarella cheese, then fold it into a triangle.
Deep-fry the pizza Samosas until they are golden brown and crispy.
Sauté onions for the meat pastry filling, then cook the ground meat and mushrooms.
Add tomato paste, bell peppers, lime juice, and spices to the meat mixture and set aside to cool.
Activate the yeast and mix it with flour, egg, and oil; knead the dough and let it rise.
Roll out the dough, fill it with the meat mixture and optional cheese, and seal the edges tightly.
Brush the meat pastries with egg wash and bake until golden, or deep-fry until crispy.
Slice the lamb and chicken breast into thin strips for the Saj Kebab.
Chop the onion and fry it in butter and oil with turmeric and black pepper.
Add the meats and cook them until they release their liquid.
Cover the pan and let the meat cook thoroughly.
Add chopped bell pepper, tomato paste, and tomato puree to the meat.
Mix in your favorite spices and simmer until the extra liquid is gone.
Serve the Saj Kebab hot with bread or rice and tomatoes.
Grate the potatoes and onion for the Shami Kebab, then squeeze out all the extra water.
Mix the grated potato and onion with ground meat, salt, pepper, and turmeric to make the patty base.
Add chickpea flour to help the mix hold its shape.
If the mix is too loose, add an egg and mix well; cover and let it chill in the fridge for an hour.
Shape the mix into small patties and fry them in hot oil until they are golden brown on both sides.
Chop and fry tomatoes with a little oil and spices to make a sauce on the side for the Shami Kebab.
Chop the herb mix very finely for the Kookoo Sabzi.
Sauté the herbs quickly in a little oil and let them cool.
Beat the eggs with salt, pepper, and turmeric to make the egg base.
Add soaked barberries and chopped walnuts to the egg mix if desired.
Let the herbs cool completely, then add them to the eggs and mix everything up.
Pour the whole mixture into a hot oiled pan and cook.
When the bottom is set, cut it into pieces and flip to cook the other side.
Serve the Kookoo Sabzi with bread and fresh sides.
