Prepare a special spice mix by roasting 1 tablespoon coriander seeds, 0.5 tablespoon cumin seeds, 1 teaspoon black pepper, 6-7 cloves, 6-7 green cardamom, 1.5 inch cinnamon stick, and 4-5 dried red chilies in a pan over medium flame.

Transfer the roasted spices to a bowl and let them cool before grinding into a fine powder.

Chop 3 medium tomatoes (350 grams), 6-7 cloves of garlic, and 1.5 inch ginger, and blend them into a fine paste along with 10-12 almonds, 10-12 cashews, and 1 medium fried onion.

In a bowl, combine 1 kg chicken, 250 grams yogurt, the prepared spice mix, 3/4 tablespoon salt, 1 tablespoon Kashmiri red chili, 0.5 tablespoon crushed dried fenugreek, and the tomato paste.

Mix well and marinate for at least 2 hours or overnight in the fridge for better results.

In a pan, heat 3/4 cup oil (the same oil used for frying onions) over medium flame and add the marinated chicken.

Cook the chicken while stirring until the water reduces by half, about 15-20 minutes.

If needed, add 1/2 cup water to help cook the chicken.

Once the oil separates, add 2-3 pinches of red food color and 2-3 pinches of yellow food color for restaurant-style appearance.

Cover and let it cook for 5-8 minutes for smoke flavor.

For the mutton rogan josh, heat 0.5 cup mustard oil until smoking, then lower the flame.

Add 0.5 teaspoon cumin seeds, 7-8 black pepper, 3 cloves, 3 green cardamom, 1 large cardamom, 1 small piece of cinnamon, 1 curry leaf, and 0.25 teaspoon asafoetida, frying for 30 seconds.

Add 500 grams mutton and 1 teaspoon salt, frying until the water dries up.

Stir in 0.5 tablespoon coriander powder, 1 teaspoon cumin powder, 0.5 teaspoon ginger powder, 1 teaspoon fennel powder, 1.5 tablespoon Kashmiri red chili, and 0.5 tablespoon regular red chili, mixing well.

Add a total of 3/4 cup water and cook until the oil separates.

Once the oil rises, add 150 grams of whisked yogurt, mixing continuously to prevent curdling.

Cook until the yogurt's water dries up and oil rises again, then add 2-3 cups water and bring to a boil.

Cover and simmer on low heat for 35-40 minutes until the mutton is tender, adjusting water for desired gravy consistency.

Finish with 1 teaspoon garam masala.
