Coxinha

Cultural Context

Coxinha, a beloved Brazilian snack, originated in the late 19th century as a way to use leftover chicken. Traditionally shaped like a chicken drumstick, these savory pastries are a staple at parties and street fairs. Today, coxinhas are enjoyed throughout Brazil and have inspired variations worldwide, often filled with different meats or vegetarian options.

2 chicken breast
3 knorr stick cubes
2 small onions
2 cloves garlic
2 carrots
2 bay leaves
3 cups water
1 and a half cups full fat milk
50g butter
100g cream cheese
450g plain flour
Salt and pepper for seasoning
2 eggs
Breadcrumbs (ready or homemade)

Start by boiling 2 chicken breast with 3 cups water, stock cubes, 1 onion roughly chopped, 2 carrots roughly chopped and 2 bay leaves for around 20 minutes until chicken is cooked.

Shred the chicken and reserve the stock, discard the veg and leaves.

Fry 2 cloves of garlic crushed and half a small onion finely chopped in butter until soft.

Add 100g cream cheese, shredded chicken and salt and pepper to taste and mix all together. Best done while cooking on a low heat to help cheese mix.

Use 1 and a half cups from leftover stock, 1 and a half cups milk plus 50g of butter. Bring to boil then lower heat and add 450g of flour plus salt and pepper to taste til it forms a dough.

Once balls are formed with filling just dip in egg and then breadcrumb and fry for 10 minutes on a medium heat.
