In a mixing bowl, combine 2 cups of flour, 1 teaspoon of salt, and enough water to form a dough.
Knead the dough for about 5 minutes until it becomes smooth and elastic.
Cover the dough with a damp cloth and let it rest for 30 minutes.
In a frying pan, heat 2 tablespoons of vegetable oil over medium heat.
Add 1 chopped onion and sauté until translucent, about 3 minutes.
Add 1 diced potato, 1 diced carrot, and 1/2 cup of peas; cook until the vegetables are tender, about 10 minutes.
Stir in 1 cup of cooked chicken, 1 tablespoon of curry powder, and a handful of chopped coriander leaves; mix well and let the filling cool.
Divide the rested dough into small balls and roll each into a thin circle, about 5 inches in diameter.
Place a spoonful of the filling in the center of each circle.
Fold the dough over the filling and seal the edges with a fork.
In a deep fryer, heat oil to 350°F (175°C).
Fry the curry puffs in batches until golden brown, about 3-4 minutes per side.
Remove the curry puffs and drain on paper towels before serving.
