Prepare a steaming pot with water and bring to a boil.
In a mixing bowl, combine rice flour, tapioca flour, and cornstarch.
Add coconut milk, sugar, and a pinch of salt to the dry ingredients and mix well.
In another bowl, blend food coloring with water and add it to the mixture for color.
Stir until the batter is smooth and free of lumps.
Grease a steaming tray or cake pan with oil.
Pour a thin layer of the batter into the greased tray and steam for 5-7 minutes until set.
Remove the tray and add a layer of grated coconut or sliced banana on top.
Pour another layer of batter over the coconut or banana and steam for another 5-7 minutes.
Repeat layering until all batter is used, finishing with a layer of batter.
Steam the final layer for 10-15 minutes until fully cooked.
Allow to cool before slicing into squares or rectangles.
Serve at room temperature, optionally garnished with sesame seeds.
