Sri Lankan Egg Buns, often enjoyed as a street food snack, are a delightful fusion of flavors and textures. Originating from the island's rich culinary heritage, these buns are filled with a savory mixture of spiced chicken and aromatic herbs, reflecting the influence of both local and colonial cuisines. Today, they are a beloved treat in Sri Lanka and have found fans around the world, often served at gatherings and celebrations.

Add yeast, sugar, and warm milk into a bowl and mix.
Cover the mixture for fermentation for about 10 minutes.
In a stand mixer, add flour, then add the fermented milk mixture, egg, and salt.
Knead the dough on medium to high speed for about 7 to 8 minutes.
Add soft cold butter after 6 minutes and knead for an additional 2 to 3 minutes until smooth.
Form the dough into a ball, grease a large bowl, and cover it to rise in a warm place for about 1 hour.
After rising, punch down the dough and divide it into eight equal portions.
Shape each portion into balls and let them rest for another 15 minutes.
Stretch the edges of each ball, leaving a bump in the middle, and roll into cylinders about 6 inches long.
Seal the edges well and arrange them on a baking tray, covering with a towel to rise for another 45 minutes to 1 hour.
Preheat the oven to 350°F (175°C).
Egg wash the buns before baking.
Bake the buns for about 18 to 20 minutes or until golden brown.
Cut the baked buns and spread butter on both sides.
Assemble with halved or quartered boiled eggs, seasoned with salt and pepper, and add onions, tomatoes, banana peppers, and lettuce.
