1 teaspoon turmeric
1 teaspoon salt
1 medium red onion
10 curry leaves
2 green chilies
1 cup tomato puree
1 teaspoon red chili powder
1 tablespoon coriander powder
1/4 cup fresh coriander leaves
1 can (13.5 oz) coconut milk

Cut the eggplants in half and score them to prevent mushiness.

Rub turmeric and salt onto the scored eggplants.

Heat vegetable oil or coconut oil in a pan and place the eggplants cut side down.
