- ●2 cups glutinous rice
- ●4 cups water
- ●1 cup coconut milk
- ●1/2 cup sugar
- ●1/4 tsp salt
- ●1/2 tsp vanilla extract
- ●1/4 cup toasted sesame seeds (optional)
- ●1 ripe mango, sliced (for serving)
Instructions
- 1Rinse the glutinous rice under cold water until the water runs clear.
- 2Soak the rinsed rice in water for at least 4 hours or overnight.
- 3Drain the soaked rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel.
- 4Steam the rice over boiling water for about 30-40 minutes, or until tender and sticky.
- 5In a saucepan, combine the coconut milk, sugar, salt, and vanilla extract. Heat over medium heat until the sugar dissolves, but do not boil.
- 6Once the rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut milk mixture over it. Stir gently to combine.
- 7Let the rice sit for about 10 minutes to absorb the coconut milk.
- 8Serve the sweet rice warm or at room temperature, drizzled with the remaining coconut milk mixture and topped with toasted sesame seeds and sliced mango.

- 6Add chopped onion, garlic, and ginger; sauté until fragrant, about 3-4 minutes.
- 7Stir in diced green pepper and tomato; cook until softened, about 5 minutes.
- 8Add cumin, coriander, turmeric, chili powder, salt, and black pepper; mix well.
- 9Add the boiled chickpeas to the pan; stir to coat with spices.
- 10Cook for another 5-7 minutes, allowing flavors to meld.
- 11Squeeze lime juice over the mixture; stir to combine.
- 12Garnish with chopped cilantro before serving.
