Instructions

  1. 1Rinse the glutinous rice under cold water until the water runs clear.
  2. 2Soak the rinsed rice in water for at least 4 hours or overnight.
  3. 3Drain the soaked rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel.
  4. 4Steam the rice over boiling water for about 30-40 minutes, or until tender and sticky.
  5. 5In a saucepan, combine the coconut milk, sugar, salt, and vanilla extract. Heat over medium heat until the sugar dissolves, but do not boil.
  6. 6Once the rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut milk mixture over it. Stir gently to combine.
  7. 7Let the rice sit for about 10 minutes to absorb the coconut milk.
  8. 8Serve the sweet rice warm or at room temperature, drizzled with the remaining coconut milk mixture and topped with toasted sesame seeds and sliced mango.
