1 cup Bob's Red Mill gluten-free one-to-one baking flour
1 cup blanched almond flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cream of tartar

1 cup buttermilk
1/4 cup Kerrygold butter

Preheat the oven to 375 degrees Fahrenheit.

In a bowl, combine 1 cup Bob's Red Mill gluten-free one-to-one baking flour and 1 cup blanched almond flour.

Add 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt, and 1 teaspoon cream of tartar to the dry ingredients and whisk together.

In a separate bowl, add 2 eggs, 1 tablespoon apple cider vinegar, and 1 cup buttermilk and whisk to combine.

Grate 1/4 cup Kerrygold butter into the dry mixture after firming it in the freezer for 15 minutes.

Mix the grated butter into the flour mixture until coated.

Combine the wet and dry mixtures, stirring until just moistened.

Pour the mixture into an 8-inch by 4-inch pan lined with parchment paper, pressing it in to fill the pan.

Bake in the oven at 375 degrees for 25 minutes, then increase the temperature to 400 degrees and bake for an additional 15 minutes.

Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack.
