2 kg leg of lamb
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1 cup red wine
1 cup chicken broth
2 medium onions, quartered
4 medium carrots, cut into chunks
4 medium potatoes, cut into chunks

Preheat the oven to 180°C (350°F).

In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and black pepper to create a marinade.

Rub the marinade all over the leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.

In a large roasting pan, place the quartered onions, carrots, and potatoes as a bed for the lamb.
