Ingredients

  • 4 large oranges
  • 1 lemon
  • 4 cups water
  • 5 cups granulated sugar
  • 1/4 tsp salt
  • 1/2 tsp ground ginger (optional)

Instructions

  1. 1Wash the oranges and lemon thoroughly under running water.
  2. 2Cut the oranges and lemon in half, then slice them thinly, removing any seeds as you go.
  3. 3Place the sliced fruit in a large pot and add the water. Let it soak for about 12 hours or overnight.
  4. 4After soaking, bring the mixture to a boil over medium heat. Reduce the heat and simmer for about 1 hour, or until the fruit is soft.
  5. 5Add the sugar and salt to the pot, stirring until the sugar is completely dissolved.
  6. 6Increase the heat and bring the mixture back to a rolling boil. Cook for about 30-40 minutes, stirring frequently, until the marmalade reaches the desired consistency.
  7. 7To test the consistency, place a spoonful of the marmalade on a cold plate and let it sit for a minute. Run your finger through it; if it holds its shape, it's ready.
  8. 8Remove the pot from heat and let it cool for a few minutes before pouring the marmalade into sterilized jars.
  9. 9Seal the jars and let them cool completely at room temperature before storing them in the refrigerator.
