Combine ground lamb, finely chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper in a bowl.
Mix the ingredients until well combined and form into kebab shapes.
Preheat the grill to medium-high heat.
Brush the kebabs with olive oil to prevent sticking.
Place the kebabs on the grill and cook for 8-10 minutes, turning occasionally, until cooked through and charred.
While the kebabs are grilling, prepare the vegetables by slicing tomatoes and bell peppers.
Warm the pita bread on the grill for 1-2 minutes until slightly toasted.
In a small bowl, mix yogurt with lemon juice and a sprinkle of sumac for a dipping sauce.
Once the kebabs are done, remove them from the grill and let them rest for a few minutes.
Serve the kebabs on a platter with warm pita, sliced vegetables, and yogurt sauce.
