1 beef tongue about 1.7 kg
1 onion, quartered
2-3 cloves garlic, crushed
2-3 bay leaves
1½ tsp salt
3 tsp black and red whole peppercorns
dried thyme or oregano
chili pepper flakes
green chili pepper
sweet onion
tomato
parsley
lettuce

Wash clean tongue and remove excess fat from the base.

Put the tongue with onion, garlic, bay leaves, salt, and peppercorns in a pan and cover with enough hot water.

Put on the lid and cook over medium-high heat, checking periodically after an hour or so.

Using a big fork, check if the tongue is tender and slips off easily; if so, it's done.

Discard the water and let it chill completely.

Once cool enough to handle, gently peel off the tongue skin and trim excess fat.

Slice the beef tongue about 1-2 cm thick and arrange over a serving plate.

Generously sprinkle with dried thyme or oregano and chili pepper flakes.

Serve with salad of sweet onion, green chili pepper, parsley, and tomato.
