Hummus with Pita Bread

1 can (15 oz) chickpeas, drained and rinsed
1/4 cup fresh lemon juice (1 large lemon)
1/4 cup well-stirred tahini
1 small garlic clove, minced
2 tablespoons extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
2 to 3 tablespoons water
Dash of paprika, for serving
Fresh parsley, chopped (optional, for garnish)

1 1/2 teaspoons salt
1 tablespoon sugar
1 packet (2 1/4 teaspoons) active dry yeast
1 cup warm water

In a food processor, combine the tahini and lemon juice. Process for 1 minute, scrape the sides and bottom, then process for another 30 seconds.

Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom, and then process for another 30 seconds.

Add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom, then add the remaining chickpeas and process until thick and quite smooth (1 to 2 minutes).

If the hummus is too thick or still has tiny bits of chickpea, slowly add 2 to 3 tablespoons of water until you reach your desired consistency.

Transfer the hummus to a serving bowl, drizzle a little bit of olive oil over the top, and sprinkle with paprika and chopped fresh parsley if desired.

In a large mixing bowl, combine the yeast, sugar, and warm water. Stir to dissolve and let it sit for 5 minutes until frothy.

Add the flour, salt, and olive oil to the yeast mixture. Mix until the dough comes together, then knead on a floured surface for 5-7 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet in the oven to heat.

Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then use a rolling pin to flatten each ball into a circle about 1/4 inch thick.

Place the dough circles on the hot baking stone or baking sheet and bake for 5-7 minutes, or until the pitas puff up and are lightly browned.

Serve the warm pita bread with the prepared hummus.
