Authentic Lebanese Hummus

In modern cuisine, hummus has gained global popularity, with variations incorporating different flavors and ingredients, yet the authentic version remains a cherished classic.

Sunflower seed butter is a nut-free alternative that maintains creaminess.
olive oil

Canola oil is a more affordable option with a neutral flavor.
Soak dry garbanzo beans overnight in water.
Boil the soaked garbanzo beans the next day with a little baking soda until very soft.
Rinse the boiled garbanzo beans.
Add garlic and half a teaspoon of salt to the food processor and crush it a little.
Add the garbanzo beans to the food processor.
Add lemon juice and one tablespoon of water to the food processor, adding water little by little while checking the consistency.
Blend until smooth and creamy, adjusting with more water as needed.
Add tahini to the mixture and blend again.
Add two tablespoons of olive oil to make it creamier and fluffier.
Taste the hummus and adjust seasoning with more salt or lemon juice as needed, adding more lemon juice if desired.
Let the hummus sit for about 30 minutes to thicken slightly.
To serve, create a well in the center of the hummus and drizzle olive oil in the well.
Optionally, garnish with paprika and parsley or mint.
