4 tbsp lime juice
6 cups water
3 tbsp pimento peppers (finely chopped)
3 tbsp garlic (finely chopped)
3 tbsp chadon beni/Culantro (finely chopped)
2 tbsp onion (finely chopped)
2 tbsp thyme (finely chopped)
3 tbsp chive (finely chopped)
1 tbsp ginger (grated)
1 tbsp mustard
1 bay leaf
1 tsp clove powder
salt to taste
2 tbsp black pepper
4 oz vegetable oil
4 oz brown sugar

In a large bowl, add goat, water, and lime juice, mix thoroughly for 2 minutes.

Allow to soak for 10 minutes, then rinse under running water.

In a large bowl, add washed goat and all ingredients in the seasoning mix. Mix for 2 minutes, cover, and set aside to marinate for at least 4 hours.

Using a heavy iron pot or skillet, place on stove and turn on heat.

Add brown sugar and oil and allow sugar to caramelize, stirring until it turns dark brown (about 10 minutes).

Add goat and stir thoroughly, cover, and let cook for 15 minutes.

Allow goat to spring its own liquid before adding water.

After 15 minutes, add water if needed just above the level of the meat, then add bay leaf and cover.

Allow goat to cook for 45 minutes, checking water level to prevent burning.

After 45 minutes, check goat for doneness; if not tender, allow to cook for an additional 30 minutes, adding water if needed.

When goat is cooked, uncover and lower heat, allowing liquid to simmer down to about half the amount.

Once liquid has reduced and meat is tender, taste for salt, cover, and remove from heat.
