Wash and pat dry 3 pounds of goat meat.

Marinate the goat meat with green seasoning, salt, pepper, a dash of gravy browning, onion powder, garlic powder, garlic and herb seasoning, and fresh thyme for 2-3 hours.

In a pot, combine vegetable oil and sugar to make browning from scratch.

Once the oil and sugar start to froth, add the marinated goat meat to the pot.

Allow the meat to settle in the browning for about 3 minutes before turning it.

Move the pieces around to ensure they are all coated in the browning and allow the juices to reduce.

Add thyme, green onions, seasoning pepper, garlic, onions, and bay leaves to the pot.

Pour in hot water from the bowl the meat was marinating in, along with the scotch bonnet pepper.

Gradually add more water as the liquid decreases, cover the pot, and let it cook on medium heat.

After about an hour, add a piece of ginger and continue to simmer until the meat is tender, which should take another 30-45 minutes.
