200g Gobi (Cauliflower), cut into florets
1 large Onion, thinly sliced
3 cloves Garlic, thinly sliced
2 Green Chillies, finely chopped
1 Tomato, finely chopped
1/8 tsp Hing (Asafoetida)
1/2 tsp Jeera (Cumin)
1/2 tsp Saunf (Fennel Seeds)
1/2 tsp Salt, or as per taste
1/2 tsp Dhania (Coriander) Powder
1/4 tsp Kashmiri Red Chilli Powder
1/4 tsp Haldi (Turmeric)
1/4 tsp Garam Masala
1/4 tsp Amchur (Dry Mango) Powder
2 tsp Dhania (Coriander) Leaves, finely chopped + for garnish
1/4 cup Water

Heat oil in a pan over medium heat.

Add thinly sliced onions and sauté until golden brown.

Add garlic and green chillies, and sauté for a minute.

Stir in the chopped tomato and cook until soft.

Add hing, jeera, saunf, salt, dhania powder, Kashmiri red chilli powder, haldi, garam masala, and amchur powder. Mix well.

Add the cauliflower florets and water, and stir to coat the cauliflower with the spices.

Cover the pan and cook for about 10-15 minutes, stirring occasionally, until the cauliflower is tender.

Garnish with chopped coriander leaves before serving.
