1 kg cauliflower, cut into 6 large pieces
5 tablespoons oil, divided use
1 piece cinnamon, about 2-inches in size
½ teaspoon cumin seeds
2 bay leaves
200 grams onion (about 2 medium onion), ground into a paste
2 teaspoons garlic paste
2 teaspoons ginger paste
3 teaspoons coriander powder
½ teaspoon turmeric powder
1 teaspoon red chilli powder
200 grams tomato, pureed in the blender to make about 1 cup fresh tomato puree
1½ teaspoons salt or to taste
½ teaspoon garam masala powder
2 tablespoons coriander leaves to garnish

Heat 3 tablespoons of oil in a pan and add the cinnamon, cumin seeds, and bay leaves. Sauté until fragrant.

Add the ground onion paste and cook until golden brown.

Stir in the garlic paste and ginger paste, cooking for a few minutes.

Add the coriander powder, turmeric powder, and red chilli powder, mixing well.

Pour in the tomato puree and add salt. Cook until the oil separates from the mixture.

Add the cauliflower pieces and coat them well with the masala. Cover and cook until the cauliflower is tender.

Finish with garam masala powder and garnish with coriander leaves.
