2 tbsp Whole Cumin Seeds
8-10 Whole Blackpepper
2-3 inch Ginger
6-8 Garlic cloves
2 Green chillies
1/4 cup Water
300 grms Cauliflower
Hot water
Cooking Oil
2 medium Potatoes
1 Bay leaf
Green Chillies to taste
3 medium Onion (Sliced)
2 large Tomato (Chopped)
1/2 tsp Turmeric powder
Red chilli powder to taste
1/2 tsp Cumin Powder
1/2 tsp Coriander Powder
Salt to taste
1/2 tsp Dry Mango Powder
1/2 tsp Garam Masala
Some chopped coriander leaves
Garnish with coriander leaves

Prepare the masala by heating oil and adding whole cumin seeds, black pepper, ginger, garlic, green chillies, and water.

Boil the cauliflower in hot water until tender.

In a pan, heat cooking oil and add sliced onions, bay leaf, and green chillies. Sauté until onions are translucent.

Add chopped tomatoes, turmeric powder, red chilli powder, cumin powder, coriander powder, and salt. Cook until tomatoes soften.

Add boiled cauliflower and diced potatoes to the mixture. Stir well to combine.

Finish with dry mango powder, garam masala, and chopped coriander leaves. Garnish with additional coriander leaves.
