In a heavy-bottomed cast iron pan, heat a couple of tablespoons of oil on high heat

Add chopped onions and sauté until translucent and slightly golden brown

Add minced garlic, grated ginger, and chopped serrano peppers, sautéing for about 30 seconds

Add cumin seeds, dried chilies, and curry leaves, then add chopped tomato and cover until tomatoes break down

Add 1/2 teaspoon of salt and stir

Add spices: masala, turmeric, and chili powder, mixing well

Add 1/4 cup of water to help spices cook and glaze the pan, cooking for 30 seconds to a minute

Add lamb and mix well to coat with spices, then add salt to taste

Cover and cook on medium to medium-high heat for about 7 minutes to brown the lamb

Add 1/2 cup of water, lower heat to medium, and cook for 15 minutes before adding potatoes

After 10 minutes, add chopped potatoes and most of the cilantro, stirring together

Add another 1/3 to 1/2 cup of water, bring to a boil, then cover and lower heat to medium for about 10 more minutes until potatoes are done

Garnish with cilantro leaves before serving
