Georgian Lamb Skewers (Shashlik)

Cut leg of lamb into cubes and place in a bowl.
Slice onion and add to the bowl with the lamb.
Mince garlic and add to the lamb mixture.
Add cumin powder, coriander powder, fennel powder, dry fenugreek, paprika powder, chili powder, and sea salt to the bowl.
Drizzle red wine vinegar and vegetable oil over the mixture and toss to coat.
Mix all ingredients thoroughly and let marinate for at least 2 hours in the refrigerator.
Soak wooden skewers in water for 30 minutes to prevent burning.
Preheat the grill to medium-high heat.
Thread marinated lamb onto the skewers.
Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until lamb is browned and cooked through.
Remove skewers from the grill and let rest for a few minutes before serving.
Garnish with chopped fresh coriander before serving.
