Welcome to the wood-fired workshop; we're making khachapuri.

Use around 250 grams of ready-made dough, which can be leftover pizza dough.

Press fingers into the dough to start elongating it into an oval shape.

Fold one end over a little, then the other end to create a boat shape.

Roll the edges over and press them down to create raised edges for filling.

Place khachapuri on a piece of silicone sheet or oven liner.

Prepare the filling: top with olive oil, red onion, mushrooms, chopped tomato, and chopped jalapeno.

Add lots of cheese: mozzarella, smoked mozzarella, cheddar, and feta.

Brush the edges with egg wash before baking.

Bake at a gentle temperature below 250°C (around 230°C ideal) for about 15 minutes.

After 7-8 minutes, take them out and make a well in the center for the egg.

Crack an egg into the well and return to the oven until cooked.
