Traditionally enjoyed as a hearty meal, it symbolizes hospitality and is often served at gatherings and celebrations. Today, this cheesy bread boat has gained international popularity, with variations appearing in restaurants around the world, each adding their unique twist to this classic.

Crack 2 eggs into a bowl to check for shells.
Add 300 grams of kefir and mix.
Add 40 grams of sunflower oil, 1 tablespoon of sugar, and 1 teaspoon of salt, then mix.
Add 10 grams of fast working yeast and mix until the sugar dissolves.
Let the mixture sit for about 15-30 minutes until bubbles form, indicating the yeast is active.
Add 600 grams of all-purpose flour and mix for about 10 minutes until the dough is stretchy.
Cover the dough with foil or a towel and let it rise for 20-40 minutes until doubled in size.
Prepare the stuffing by mixing 200 grams of suluguni cheese with 1 egg and 2-3 cloves of minced garlic.
Divide the dough into two pieces and shape each into a boat.
Fill each boat with half of the cheese mixture and let it rise a bit more.
Preheat the oven to 200°C and let the dough rise while the oven heats.
Bake the khachapuri until golden brown, turning it if necessary for even cooking.
Make a small hole in the cheese and crack an egg into it, then return to the oven for 2-3 minutes.
Add butter on top before serving.
