For the dough, we'll need white bread flour, water, yeast, salt, and olive oil.

For the filling, we'll use a mix of feta and mozzarella cheese in a 50/50 ratio, plus a whole egg.

We're making two khachapuri, so we need two egg yolks for topping and two knobs of butter.

Combine the mozzarella, feta, and whole egg in a bowl and mix until smooth, then cover and refrigerate.

In a large bowl, combine water, yeast, salt, and olive oil and mix to dissolve the salt and hydrate the yeast.

Add the flour and mix until no dry flour remains, then knead by hand for about 5 minutes until smooth and slightly sticky.
