Combine warm milk, warm water, and sugar in a bowl.
Sprinkle dry active yeast over the top and let sit for a couple minutes.
Drizzle in olive oil, then add all-purpose flour and salt.
Mix with a wooden spoon until a very wet and sticky dough forms.
Transfer the dough onto a floured surface and knead in more flour until manageable, about 3 minutes.
Shape the dough into a ball and place it in a lightly oiled bowl; cover and let rise in a warm spot for 1 to 1.5 hours or until doubled in size.
Prepare the cheese blend using 1 part Monterey Jack, 1 part low moisture mozzarella, and 2 parts feta cheese; mix and refrigerate until needed.
Deflate the risen dough and transfer it onto a floured surface; press it out into a rectangular shape.
Roll out the dough on a floured piece of parchment paper into a rectangle between 1/8 and 1/4 inch thick.
Place cheese in two rows an inch or two away from each edge of the dough; each row should have about 2 ounces of cheese.
Fold the dough over the cheese and roll towards the center, leaving a gap in the middle.
Seal the ends by pressing and twisting the dough.
Transfer the formed dough onto a baking sheet using the parchment paper.
Place the remaining cheese mixture in the center of the dough.
Optionally brush with egg wash before baking.
Bake in a preheated 475°F oven for about 15 minutes or until golden brown.
Remove from the oven and make a well in the center; crack a large egg into the well.
Return to the oven for 3 to 4 minutes until the egg is halfway set.
Finish with slices of butter and a sprinkle of cayenne before serving.
