Prepare the dough for khachapuri by combining 1 cup of warm water and 1 teaspoon of dry yeast, and wait for the yeast to activate.
In a large bowl, add 4 cups of flour, 1 tablespoon of sour cream, 1 egg, 50 grams of melted butter, 1 tablespoon of powdered sugar, and 1 teaspoon of salt.
Once the yeast is activated, add it to the flour mixture and knead until the dough is non-sticky.
Cover the dough and let it leaven.
For the second dough, mix 1.5 cups of hot water and 1.5 cups of hot milk, add 1 tablespoon of powdered sugar, 1 teaspoon of dry yeast, and let it ferment.
Add 3 tablespoons of vegetable oil, salt, yellow ginger, black pepper, paprika, and chopped parsley to the second dough mixture.
Prepare the filling for khachapuri by crumbling 250 grams of unsalted cheese and mixing it with 300 grams of unsalted cottage cheese and 1 egg, adding half a teaspoon of salt to taste.
Chop vegetables like colored peppers, potatoes, and onions into thin cubes for the filling.
After the dough has fermented, prepare to cook by heating a pan and greasing it with oil.
Roll out the dough as thin as possible and layer it, using 150 grams of melted butter to grease between layers.
Place 2 full spoons of the cheese filling on each piece of dough and shape them accordingly.
Cook the khachapuri in a preheated oven at 250 degrees Celsius until golden and serve hot.
