In the bowl of a stand mixer, add active dry yeast, lukewarm milk, lukewarm water, and granulated sugar. Stir and let the yeast proof for about 15 minutes.

In a medium bowl, add 2 cups of flour, dried basil leaves, and ground sea salt. Whisk until blended and set aside.

Add ½ tablespoon of olive oil and the dry ingredients to the stand mixer with the proofed yeast. Process on speed 2 for 2 minutes, then increase to speed 3 and process for 5 minutes, adding a tablespoon of flour at a time until the dough clings around the hook.

Increase to speed 4 and knead for 4 minutes, adding more flour if it sticks to the bottom.

Drop the dough on a lightly floured work surface and form a ball. Place in a greased bowl, cover with a towel, and let rise in a draft-free area for 1:30 to 2 hours until doubled in size.

In a small bowl, combine Havarti cheese, Mozzarella, crumbled feta cheese, and freshly ground mixed peppercorns. Mix well and set aside.

After rising, drop the dough on a floured surface, sprinkle with flour, and form a ball. Cut into two equal pieces and flatten each piece.

Roll each piece into a rectangle about 11-inches long by 7-inches wide. Place 2/3 of a cup of the cheese mixture onto the dough, leaving an inch around the edges. Roll the widest sides over the cheese and twist the ends to form a boat shape.

Spoon the remaining 1/3 of a cup of cheese mixture into the center of the boat. Transfer to a baking sheet lined with parchment paper, reshaping as necessary.

Brush the edges with an egg wash and transfer to a preheated oven at 450ºF. Bake for 13 to 15 minutes until golden brown and cheese is melted.

Add an egg into the center of each khachapuri and sprinkle with smoked paprika. Return to the oven and bake until the eggs are almost set, about 5 to 7 minutes.

Allow to cool slightly and sprinkle with fresh chopped parsley before serving.
