Soak rice paper wrappers in warm water until pliable, about 10-15 seconds.
Lay the soaked wrapper on a flat surface.
Place a small handful of rice vermicelli noodles in the center of the wrapper.
Add a few shrimp on top of the noodles.
Layer lettuce, mint leaves, cilantro, carrots, and cucumbers on top.
Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
Repeat with remaining wrappers and filling ingredients.
Prepare peanut sauce by mixing peanut butter, lime juice, garlic, salt, and sugar until smooth.
Serve spring rolls with peanut sauce and garnish with chili flakes.
