1

Add 5 pounds of oxtails to a pressure cooker with water halfway filled and 2 beef bouillon cubes, cooking for approximately 25 minutes until tender.

2

If not using a pressure cooker, braise in a Dutch oven for approximately 16 minutes or boil until tender.

3

Set aside 2 tablespoons of browning sauce and place a pot over medium-high heat, adding olive oil and the browning sauce.

4

Brown the oxtails in batches for approximately 3 minutes per side, then remove and set aside.

5

Slice 1 medium red onion and 1 green bell pepper, and dice 8 cloves of garlic.

6

Add the onions, green bell peppers, and garlic to the pot, cooking for 2-3 minutes.

Add 2 cups of diced tomatoes and cook for an additional 3 minutes.
