Melt 2 and 1/2 tablespoons of unsalted butter and set it aside to cool while preparing other ingredients.

In a bowl, measure out 1 cup (120 g) of all-purpose flour. Avoid packing the flour to prevent overmeasuring.

Add 2 teaspoons of baking powder, 1/4 teaspoon of salt, and 1/8 cup of raw cane sugar to the flour. If you don't have raw cane sugar, you can use granulated sugar.

In a separate bowl, combine 3/4 cup of room temperature buttermilk, 1 room temperature egg, 1 teaspoon of pure vanilla extract, and the cooled melted butter.

Pour half of the buttermilk mixture into the bowl with the dry ingredients to mix without overmixing.

Once the buttermilk is mostly combined, add the remaining buttermilk and finish mixing until the batter is slightly lumpy.

Let the batter sit while heating the skillet to medium heat, using oil or butter for cooking.

Cook the pancakes until they reach your desired doneness, flipping them without smashing after the flip to prevent the batter from weeping out.
