Ghanaian Shrimp Fried Rice

Steam chicken quarters with blended onions, ginger, garlic, and herbs for flavor.
Add a teaspoon each of salt and chicken seasoning to the chicken and mix well.
Add half a cup of water to the chicken and cover to steam for 10 minutes.
Once chicken is cooked, remove it and allow it to rest before frying in the oven using air fryer method.
Add turmeric powder, curry powder, and salt to the chicken stock.
Stir well and add 2 and 1/2 cups of washed Yaspin long grain rice to the stock.
Cover and cook the rice for 25 minutes until fluffy.
Once the rice is cooked, place it in a bowl to rest.
Crack 4 eggs, season with garlic powder and all-purpose seasoning, and set aside.
Dice vegetables and prepare for frying.
In a pot, add oil and fry the shrimp until cooked, then set aside.
Scramble the seasoned eggs in the same pot until fluffy, then set aside.
Add more oil to the pot, then add diced vegetables and fry for 2 minutes.
Season the vegetables with all-purpose seasoning, garlic granules, and a bit of salt.
Add the cooked rice to the vegetables and mix well.
Add a teaspoon each of soy sauce, oyster sauce, and a little Magi seasoning to the rice and mix.
Add the cooked shrimp and scrambled eggs to the rice and mix everything together.
Garnish with chopped spring onions and allow to simmer for a minute before serving.
