The dish reflects the island's rich culinary heritage, combining Indian spices with local ingredients, a legacy of the Indian indentured laborers who arrived in the 19th century. Today, it is enjoyed not only in Jamaica but also in Caribbean communities worldwide, celebrated for its bold flavors and tender meat.

Pour warm water over goat meat and let it sit to clean.
Chop half an onion, a tomato, garlic, ginger, and scotch bonnet pepper.
Add olive oil to the goat meat to help the seasoning stick.
Season the goat meat with complete seasoning, turmeric, and curry powder.
Rub the seasoning into the goat meat and cover it to marinate in the fridge overnight.
The next day, heat olive oil in a pot over medium heat.
Add half of the curry powder to the hot oil and let it cook briefly.
Add the marinated goat meat to the pot and sauté for a minute without adding water.
Stir frequently to prevent burning and allow the goat to cook slowly.
Pour in about half the amount of boiling water, ensuring not to flood the pot.
Cover and let the goat meat cook on low to medium heat for about an hour, checking occasionally and adding water as needed.
After an hour, check the goat meat for tenderness and adjust cooking time as necessary.
Chop carrots, scallions, and purple onion to add to the curry.
After checking the goat, add the chopped carrots, scallions, and purple onion to the pot.
Let the vegetables cook for about 2 minutes, ensuring the carrots remain slightly crunchy.
If needed, adjust the gravy by adding more water, but keep in mind personal preference for gravy.
Turn the heat to low and let the curry steam for about 2 minutes before turning it off.
Serve the curry goat with rice.
