Naýryz kóje - traditional kazakh dish

Rinse rice under cold water until the water runs clear.

Soak the rice in water for 30 minutes, then drain.

Heat vegetable oil in a large pot over medium heat until shimmering.

Add chopped onion and sauté until translucent, about 5 minutes.

Stir in diced lamb and cook until browned on all sides, about 8-10 minutes.

Add grated carrot and minced garlic, cooking for another 3-4 minutes.

Season with salt, black pepper, cumin, and bay leaves, stirring to combine.

Pour in water, bringing the mixture to a boil.

Add the soaked rice, spreading it evenly over the meat mixture.

Reduce heat to low, cover, and cook for 20-25 minutes until rice is tender.

Once cooked, remove from heat and let it sit covered for 10 minutes.

Fluff the rice with a fork, mixing in dried fruits and nuts.

Garnish with fresh herbs before serving.
