1 tablespoon fresh ginger
220 grams onions (about 3 medium)
1.5 teaspoons salt
1 tomato (roughly chopped)

Heat oil in a large pot over low heat.

Add whole spices: bay leaves, cinnamon sticks, cloves, cardamom, coriander seeds, and black pepper seeds, and let them sizzle for 20-30 seconds.

Add the washed lamb to the pot and brown it.

Mix in 1 tablespoon of garlic paste and 1 tablespoon of finely chopped fresh ginger, cooking for 2-3 minutes.

Add 220 grams of sliced onions and 1.5 teaspoons of salt, cooking for another 2-3 minutes.

Add 1 roughly chopped tomato and cover the pot, cooking for about 1-1.5 hours until the lamb is tender, checking occasionally and adding hot water if necessary.

After about an hour, add chili powder, turmeric, and coriander powder, and mix well.

Add shatkora pieces and some of the water infused with shatkora, cooking for an additional 7-8 minutes.
